This Summer Plum Cake was created for those of us needing a quiet pause in the midst of warm, humid and busy days. Juicy plum bits folded into a rose water–infused batter bring a gentle tartness and a subtle floral lift to every bite. A toasted almond crumble adds the right nutty crunch while a final a sprinkle of rose petals gives a touch of summer beauty. Best enjoyed with a cup of rose or black tea, or served warm as a dinner dessert with vanilla ice cream. This is a cake to slow down with, breathe in, and savour.
